Banana Bread

Ingredients:Banana Bread
1 3/4 C Flour
1 1/2 C Sugar
1/2 t Salt
1 C Chocolate Chips
1 C Mashed Bananas
2 lg Eggs
1/3 C Buttermilk
1/2 C Vegetable Oil
1 t Vanilla

Time: 1 hr. / Servings: 12 / Calories per Serving: 374

Instructions:
Heat the oven to 350 degrees.  Grease (and flour if you don’t have non-stick pans) 3 mini loaf pans (or 2 large loaf pans, 18 standard muffins, or 36 mini muffins).  Mix flour, sugar, baking power, baking soda and salt.  Stir in chocolate chips.  Mix bananas, eggs, buttermilk, oil and vanilla together in a separate bowl.  Mix wet and dry ingredients together.  Divide batter into pans and bake for 30-35 min for loaf pans (18-20 min for muffins) or until the toothpick comes out clean.

Jamie’s Adjustments:
None!  On this one I follow the recipe.  The only thing I have changed is when I can’t buy buttermilk I make it by filling 1 C with milk so that its a little less than a full cup, and then adding 1T of vinegar or lemon juice.  Let it sit for 5min and tada you have buttermilk!

Robb’s Notes:
This is a really light and fluffy banana bread because of the buttermilk.  If you’re like me and like a heavier banana bead then this isn’t the recipe for you.  This is more like banana cake… which is also yummy.
