Cauliflower Pumpkin Mash

Ingredients:mash
1 part cauliflower
2 parts pumpkin
Salt and Pepper to taste

Time: 20min / Servings: (in a 12 c batch) 6 / Calories per Serving: 57

Instructions:
Cut the cauliflower and pumpkin into a pot and cover with water.  Cook until vegetables are very soft.  Drain the water and put veggies back into pot.  Mash the pumpkin and cauliflower with either a fork, potato masher or food processor (depending on the consistency you want).  Add salt and pepper to taste.

Jamie’s Adjustments:
I use this as a healthier alternative to mashed potatoes.  You can do just cauliflower or the pumpkin on its own but I like the texture the pumpkin adds to the cauliflower and the cauliflower lightens the flavor of the pumpkin.  I’ve made this with all kinds of combinations (more cauliflower than pumpkin, equal parts, etc.) It really just depends on your preference.
