2 t garlic powder
2 t red pepper flakes
1 t salt
1 t ground cumin
1 t paprika
1/4 t cayenne pepper
6 skinless, boneless chicken thighs (about 500g)
6 T honey
1 T red wine vinegar
Time: 20min / Servings: 6 / Calories per Servings: 341 (thighs) 121 (Breast)
Mix the first 6 ingredients (spices) in a bowl.
Mix the vinegar and honey in a different bowl and mix well.
Grease the broiler pan with olive oil (this gets somewhat messy so if you want to make cleanup easier you may want to cover the pan with aluminum foil)
Place the chicken on the pan and sprinkle both sides of the meat with the spice mix.
Broil chicken 5 minutes on each side
Remove chicken from oven and brush the honey mixture on chicken (use 1/2 the mixture).
Broil for 1 minute and then turn the chicken over and brush the other side.
Broil 1 additional minute or until chicken is done.
I LOVE this recipe. It is the best and quickest dinner that I have found and the chicken is amazingly tender. I personally like using chicken thighs the best but you can use any meat you like. I’ve also used chicken breasts (it works best if you use a meat hammer to flatten the breast so that it is equal thickness and tenderized) and pork chops.
I find I get the best results if I keep the broiler pan on a lower rung (further away from the heat) for the first 10 min of cooking. Then for the last 2 min (after I glaze the meat) I move it up to the top rung to get the crispy outside on the meat.
