2 lbs Halibut Filets (White Fish)
1/2 C White Wine
2 Potato (cubed)
2 Carrot (cubed)
Salt and Pepper
Time: 20min / Servings: 4 / Calories per Serving: 331
Place oil into a pan and top with carrots and potatoes. Salt and pepper the veggies to taste and turn heat on low. Cover the pan. With heat still on low, Saute veggies for about 5 min or until slightly tender. As you cook the veggies leave the top on the pan. Stir the veggies by shaking the pan from N-S and E-W. Salt and pepper the fish and place on top of the veggies. Pour the wine over everything. Cover and reduce heat to low. Simmer for 10-12 min. Again, do not uncover the fish. Again, “stir” by moving the pan N-S and E-W. When fish is flaky its done.
