Chickpea Salmon


1/3 c tomato sauce of your choice (you can use marinara, crushed tomatoes, etc.)
1 t capers
1/2 clove of garlic
1 5oz Salmon fillet
1/2 t olive oil
Salt and black pepper to taste
1/2 c chickpeas
1T chopped fresh basil

Time: 20min / Servings: 1 / Calories per Serving: 412


Combine tomatoes, capers and garlic in a bowl and set aside.  Season both sides of the salmon to taste.  Heat olive oil in a medium skillet over medium to high heat.  Place salmon in the pan and cook on each side for about 2 min.  Pour tomato mixture over the salmon and cook covered for about 5 min.  When the salmon flakes when tested with a fork remove from heat and garnish with fresh basil.

Jamie’s Adjustments:
I like to play with the tomato sauce on this one.  Depending on what flavor I am going for you can make this dish have more of an italian flair with marinara sauce, a more Mediterranean flair by using crushed tomatoes and adding a  few olives or Mexican by using pico de gallo and some cilantro instead.  You can also give this recipe more of a kick by seasoning the salmon with a little crushed red pepper.
